I've had a few dogs show interest in my kite while flying them. Generally it has always been my DS that is well beaten up already.
While the kite is in the sky they have looked like they want to rip it apart, but when its on the floor they have lost interest.
I personally wouldn't harm the dog at all, but I would be trying to grab my phone so I can video the dog and more importantly the owner. Then I would assess the damage to the kite and speak to the dog owner about cost of replacement or repair.

Problem is by the time you've grabbed your deterrent of choice doggie is already chewing your kite! It is a problem though to be fair it's a minority of owners that let their dogs run riot - I get on well with most of my local dog walkers. For the minority I find that a less than friendly "CAN YOU KEEP THAT F&*KING THING UNDER CONTROL!!! " often gets their attention.
